After 15+ years each working in this kitchen and on this floor, Trace Hildebrand and Tanner Seufer have officially purchased Whitewater Bar & Grill from the previous ownership.
Combined, that is over 30 years of WWBG experience moving from line cook to general manager to owner — without missing a season.
Why this matters
Restaurant ownership transitions are usually where institutional knowledge dies. Recipes drift, quality slips, regulars stop showing up. We are doing the opposite: the people running the kitchen and the bar today are the same people who have been running them for over a decade.

What is next
Same opening day (April 17 every year). Same menu. Same prices. Same staff coming back season after season. Bigger commitment to the trail community through 1% for Trails. And — eventually — a sister property downtown that became Whitewater Rooftop Social.
